Skirlie

Is a traditional scottish oats and onions dish which is best served with stovies.

Ingredients
2oz/50g dripping
1 finely chopped onion
6oz/175g oatmeal salt
pepper

Method
1 Melt the dripping in a pan.
2 Add the onion, fry until it is soft but not coloured.3 Stir in the oatmeal.
4 Season with a little salt and pepper.
5 Cook gently for 10 minutes.

Serve immediately to accompany stovies
